was burned to the ground during the French Revolution, and has since risen from the ashes.

It was then sold lock, stock and barrel after the Second World War. Now a modestly-sized property in the Muscadet Sèvre & Maine sur Lies appellation, Château de l’Hyvernière produces wines that respect the region's long-standing tradition. Hyvernière boasts a very attractive winery, with some 20 underground vats providing ideal conditions for vinification and offering optimal thermal inertia for fermentation.

Chateau de l’Hyvernière

With its rich soils and a terroir allowing for early harvests, Hyvernière produces a crystalline white with a mineral, saline profile that makes it the perfect pairing for oysters. Château de l'Hyvernière is a technically accomplished wine, offering a complex blend of citrus aromas, with distinctive minerality. On the nose, a hint of lemon zest joins initial notes of white flowers, as well as yellow and white fruit. A long finish caps off this elegant Muscadet.
