Château Cavalier dares a Grand Blanc in Provence !
Château Cavalier unveils its first Grand Blanc exclusively at Caves Nicolas.
Starting in October 2024, white wine enthusiasts will have the exclusive opportunity to discover the first white wine from Château Cavalier at Caves Nicolas. Château Cavalier is located in inland Provence, in Vidauban, benefiting from the protection of the Massif des Maures and the foothills of the Alpes du Haut-Var, in the heart of the Argens Valley.
This signature wine, named Grand Blanc, is the result of the vision and passion of the Château Cavalier team: Philippe Castel, the visionary manager and co-owner; Lucas Puyo, the estate’s winemaker-manager; Léa Mazubert, the young and talented technical director of the Castel family’s estates; along with the expert advice of Jean Natoli, a renowned oenologist in Provence and Languedoc.
Together, they have crafted a gastronomic white wine that stands out for its originality, aromatic complexity, and beautiful minerality.
Exceptional Terroir and Vinification
This white wine comes from 3 hectares of carefully selected parcels on an estate of 138 hectares, with sandy-silty and clay-sandy soils over a sandstone subsoil, which gives the wine its remarkable minerality.
A harmonious blend of Rolle (40%), Sémillon (40% - a nod to the Castel family’s Bordeaux origins), and Clairette (20%), this wine is the result of meticulous work from the vineyard to the cellar. The grapes are harvested at night to preserve their freshness, and partial vinification and aging in acacia and oak barrels and demi-muids for five months, with regular bâtonnage of the lees, have brought out the full richness and aromatic complexity of Château Cavalier's Grand Blanc.
Environmentally Respectful Production
Château Cavalier prioritizes environmentally friendly farming practices and has been Terra Vitis certified since 2012, as well as Haute Valeur Environnementale (High Environmental Value). It uses 100% organic fertilizers, and 27% of the estate consists of agroecological infrastructures (stream, trees, hedges, pond) that foster biodiversity.
Facing the challenge of soil preparation, Château Cavalier implemented eco-grazing two years ago, welcoming 800 sheep to graze the grass close to the ground, facilitating the initial soil work. This creates a win-win synergy with a local shepherd.

"We were particularly charmed and captivated by the balance and finesse of this wine. It is truly a Grand Blanc, a carefully crafted wine, showcasing remarkable complexity, freshness, and finesse.
On the nose, we appreciated its open, indulgent character with notes of almond paste, melted butter, fresh hazelnut, and wisteria syrup, with a hint of mineral, reminiscent of flint.
It opens with a rich, round attack on tangy notes of passion fruit, mango, dried banana, and a beautiful briny finish.
Finally, this Grand Blanc concludes with a savory finish of white flowers and candied exotic fruits, showing beautiful finesse and persistence.
